Jammy Yammys

Tomorrow I’m preparing for my cooking demonstrations at Graf Grower’s.

The theme is back to school recipes.

This is one of those recipes that if you read the ingredients you may never try it.

So I didn’t tell Hubby what was in them…

Sweet potatoes and jelly muffins!

Cook yourself up some sweet taters…

Mash ‘em up (or if you want you can use canned sweet potatoes – IMHO – ick!)

Toss those taters into the oven and cook until soft.

Let cool and mash ‘em up.

Mix ‘em up with jam (I used strawberry), egg, milk and oil

Combine it with the flour mixture.

Don’t over mix….it’s okay to have lumps.

Put them in the pan and bake!

So easy.

So healthy.

Drizzle with a glace made from strawberry jam and powdered sugar.

SWEET!

BTW – I have the rest of the muffins hiding from my daughter and Hubby!

    I imagine that sweet potato does great things for the texture of the muffin and the addition of the jam is a great touch. They look delicious. I will have to sneak if I make these-hubby is not fond of sweet potatoes. Thanks for posting this.

      Once they’re made, you really can’t taste the sweet potatoes. It adds moisture much like a pumpkin muffin!
