Cold soup made with beets?
I’ve been hearing it all week with Hubby as I prepare for my cooking demonstration on Saturday featuring cold soups.
Trust me, there is nothing more refreshing and full of flavor than a chilled beet soup with a dollop (I love that word – dollop) of sour cream or yogurt.
It’s colorful.
It’s flavorful.
It’s healthy.
I also think it’s elegant.
The soup touts healthy ingredients like chopped cabbage, chopped carrots, shredded beets and celeriac.
Oh.
What’s celeriac, you say?
It’s the best of celery in a big root ball.
If you can’t find celeriac…regular celery would do.
That is if you are forced to pass up a big ball of flavor…
