Cauliflower Cheddar Soup

With the temperatures being what they are…

It’s officially the end of the season…and my gig with Graf Grower’s cooking demonstrations ends Saturday.

I’ll be featuring “late summer/early fall” vegetables including cauliflower.

Cauliflower is so misunderstood.

It’s white and boring…

With a little nurturing, it can burst into a dish spectacular!

I’ve roasted cauliflower…

and made cauliflower “mashed potatoes”.

Today I bring you…

Cauliflower Cheddar Soup!

The recipe originated from the blog “Island Vittles”

I’ve simplified it somewhat and bring you this delicious version.

Easy to make…

A fragrant soup with undertones of smoked cheese…

and cream…(well, lowfat Half and Half)

    Nice outcome with the cauliflower and cheese and I must say I too cook caulis very often at home. thanks for another idea of using caulis to make a different kind of soup.
