This week I’m starting WeightWatchers…again.
That’s not to say I’m not going to stop blogging about gooey, sticky things…I’ll just have to give them away.
Until then, we’re having mango salsa with pork chops tonight. Mangoes were on sale this weekend.
You don’t feel like you’re dieting with mango salsa…
You can have it with chips, with fish, with pork chops or just spoonfuls in your mouth…
The new WeightWatcher’s Points Plus program doesn’t assign points to fruit….
So spoon away!
Easy ingredients…
A mango, red onion, jalapeno pepper, red pepper, cilantro and lime.
Chop it all up.
Squeeze the lime.
Salt and pepper….
and pig out!

Everything is so colorful and beautiful! And Kielbasi looks so happy. By the way, I printed many of your recipes yesterday and am going to start a binder so I don’t lose such deliciousness. Michael in particular asked for the chicken recipe. I don’t have a gas grill…for indirect heat can I just bake it in the oven for a while, then put it on the charcoal grill to add cripyness?
I love Kielbasi and should have concocted something a little more ‘porky’ – but am feeling a bit ‘porky’ myself these days! I’m sure you’ll be fine baking the chicken in the oven and grilling it afterwards…let me know how it works out. Thanks for all my props – as you can see, I’m loving them!

Mango salsa is definitely an awesome healthy food! Good for you to find a way to eat healthy, but have it still be yummy, too. I love the idea of mango salsa, but I never knew that it was this simple to put together. This would go so great with so many summery dishes!
