I’m going to tell you upfront that I have had a ‘sucky’ day.
We woke up to 2 inches of water in our basement…in our new home…
Good news is that all the photos from the past twenty years were salvaged.
The day was filled with mops, rags, papers towels and phone calls to insurance agents, builders and anyone who was sympathetic.
Halfway through the morning feeling very frustrated, I thought about Nonnie.
Nonnie was my ex-mother-in-law…and my daughters’ grandmother.
We loved Nonnie.
She made everything better…with her words of wisdom and mandel bread.
When things got tough, she was always there with a plate of mandel bread.
So today, we’re having mandel bread.
Mandel bread is a biscotti type of cookie with almonds as a base.
The dough is easy to make with eggs, flour, oil, almonds, baking powder and flavoring…
The dough is shaped into logs and baked.
After baking, you slice the bread into 1/2 inch slices…
and bake again…
What you get is a delicious, light cookie full of almond flavor…
and comfort…
All that’s missing is a hug from Nonnie…
We said goodbye to her a year ago…but her love and mandel bread lives on.
