Let’s start over.
I had a chance last night to spend an evening with 5 of my dear friends from the last 15 years. A long overdue reunion. It all started with the intentions of gathering at a local vineyard. We didn’t check to see whether the vineyard was open or not.
It was NOT.
NOT to worry…
We were prepared…
I had my appetizer ammunition….
And after a quick wine run…
We were ready to catch up and enjoy the evening on our deck…
I love this appetizer. It’s so easy – it’s an “why didn’t I think of that” recipe. It all started at a ‘Night at the Races’ fundraiser in the midst of winter.
Everyone was bringing the traditional cheesy dip, potato chips, salsa, veggie plate appetizers…
And then SHE walked in….
Not only was SHE gorgeous but she walked in…
With this gorgeous platter of antipasti…
And I said to myself…
“WHY DIDN’T I THINK OF THAT?”
Perfect accompaniment to a night of wine-ing…
Ingredients are simple:
cherry tomatoes, small balls of fresh buffalo mozzarella, green and black olives, Genoa salami, pepperoni, chunks of pepper jack cheese, marinated artichoke hearts and pepperochini.
Make a bamboo skewer of all the ingredients…
Shake a healthy dose of Newman’s low fat Italian dressing over the skewers.
And serve…
Pour the wine…
and talk about boobs and boyfriends. OLD boyfriends…
GIRLS NIGHT OUT.
