Rainbow Jello Salad

Happy New Year! We are going to start the new year off bright! I’m back from my holiday hiatus and thank you for your patience and well wishes while I took some time to be with my family during the holidays. After the loss of my Mother in November, it was a quiet Christmas. As she would have wanted it, we did giggle and share her traditions that she passed down to us. In looking at the photos later – I saw the sadness in everyone’s eyes as we made it through the holidays.

Today I’m sharing with you one of our traditions that graces the holiday table each year.

It’s colorful, it’s fun and it takes like gumdrops!

Easy to make but you’ll need to do it when you’re home with a few hours on your hands to let each layer set.

The white layer is gelatin, milk, sugar and sour cream, adding a creamy texture to the dish. If you’re watching calories in the new year, you can easily make it with sugar free jello and have no guilt!

Rainbow Jello Salad
Recipe type: Desserts, Side Dishes
Serves: 8-10
A colorful, fun holiday side dish!
Ingredients
  • 2 cups milk
  • 2 envelopes Knox gelatin
  • 2 tsp. vanilla
  • 4 package (3 oz. each) Jell-O (lime, orange, lemon, cherry)
  • 1 cup sugar
  • ½ cup cold water
  • 2 cups sour cream (I use the light sour cream)
Instructions
  1. Spray oil a 9 x 13 inch casserole dish.
  2. Bring milk to a boil.
  3. Remove from heat and add sugar; stir until dissolved.
  4. Mix cold water with Know gelatin until set.
  5. Add to milk. Add sour cream and vanilla.
  6. Blend all with mixer.
  7. Divide this mixture into 3 parts – approximately 1¾ cups each.
  8. Set aside.
  9. Dissolve 1 package of Jell-O with one cup of hot water and ½ cup of cold water.
  10. Pour first Jello-O into pan and refrigerate for 1 hour.
  11. Remove from refrigerator and spoon first part of milk mixture on top.
  12. Refrigerate for 30 minutes.
  13. Continue this pattern – refrigerating Jello-O for 1 hour and milk mixture for 30 minutes until all 7 layers are set.
  14. Keep refrigerated. Can be made the day before.
  15. Helpful Hints:
  16. If the milk mixture gets too set before pour since heat it up for 15 seconds in the microwave.
  17. When pouring Jell-O layer over milk mixture, pour it first into a spoon to disperse it without putting a dent in the set milk mixture.
  18. Other colors and flavors can be used.
