Spaghetti Pie

Woot!

It’s grandson sleepover night!

Time for hugs, giggles, play…

and holding onto every precious moment.

When I was a young mother, I was too busy to hold onto every precious moment.

Looking back now, I wish I could stop time and giggle more, hug more and play more…

I couldn’t, I was a single Mom at the time and was busying taking care of their needs.

That’s why God blessed us with grandkids!

A do-over!

Tonight I wanted something easy that the little booger would eat. I made it ahead before he came so I can have more time to play.

The recipe originated with my sister and soon became a favorite of my kids and now it’s passing down a generation…

Start with 6 oz. cooked spaghetti noodles.

Drain.

Stir in 2 tbs. butter, 1/3 cup Parmesan cheese and 2 beaten eggs.

Form spaghetti mixture into a ‘crust’ in a sprayed 10 inch pie pan.

Spread 1 cup cottage cheese (I use more when I do a deep dish pie pan) over bottom of spaghetti crust.

Spread 2 cups of your favorite spaghetti sauce (meat or meatless) over the cheese and bringing to the edge of the spaghetti crust.

Bake uncovered at 350 degrees for 20 minutes.

Remove from oven.

Sprinkle top of pie with mozzarella cheese and return to oven for 5 minutes more.

Remove from oven and let cool for 5 minutes. Slice into pie wedges and serve.

Note: This recipe can be easily adjusted to your tastes. If you prefer more pasta, cheese or sauce – simply adjust the recipe.

An easy and kid friendly recipe!
Ingredients
  • 6 oz. spaghetti
  • 2 tbsp. butter
  • 1/3 cup grated Parmesan cheese
  • 2 eggs, well beaten
  • 1 cup cottage cheese
  • 2 cups your favorite spaghetti sauce
  • 1/2 cup mozzarella cheese
Instructions
  1. Cook spaghetti according to package directions; drain.
  2. Stir butter into hot spaghetti.
  3. Stir in Parmesan cheese and eggs.
  4. Form spaghetti mixture into a ‘crust’ in a spray 10-inch pie pan.
  5. Spread cottage cheese over bottom of spaghetti crust.
  6. Top cottage cheese layer with 2 cups of spaghetti sauce.
  7. Bake, uncovered at 350 degrees for 20 minutes.
  8. Sprinkle the mozzarella cheese on top.
  9. Bake 5 minutes longer.

    Congrats on the Top 9. What a great idea, I will have to try this with my granddaughters. We make pizzas together, it’s a mess but fun. This looks delicious.

    I have made spaghetti pie a bit differently in the past (mixed everything together), but I really like your version with the spaghetti crust and cottage cheese in the middle. What a treat!
