Berry Berry Mini Pies

What do you do when it gets hot?

Go SHOPPING!

Air conditioned stores…no sweat…and a great excuse to buy things!

This weekend Hubby and I went to the mall and gravitated toward one of my favorite stores, Williams Sonoma.

I was in the baking section and admiring this cute little pocket pie mold.

After I left the store, he surprised me with it.

He’s no dummy.

He well knows that he gains here.

So here’s my little adventure in pocket pies!

He originally wanted little chicken pot pies but come on…

I had a bowl of these beauties in the frig!

I took a recipe from Epicurious.com for Blueberry Raspberry Pie and halved the berry filling recipe with a few adjustments.

The filling was berries, lemon zest, sugar, cinnamon, cornstarch and vanilla. (Printable Recipe here)

I did ‘shortcut’ today and used pre-made pie dough. (I did mention it was hot, right?)

The baby pie mold provides a cut-out for both side of the pies.

You cut them out…

Place the cutout one each side of the mold.

Fill with two tbsp. of filling…

Put a tad of egg wash around the edges…

and press….

Cuteness on a pan!

Bake for 20 minutes in a 400 degree oven.

My berry pies did run a bit…but berry pies do anyways so it didn’t bother me.

Sweetness on a plate….

Speaking of plates….I did a little more shopping this weekend as Hubby and I went to a local antique mall to escape the heat.

I came out with these beauties…

I can’t wait to use them this week!

Nothing cost me more than $12…

I think I’ll make recipes up just for these plates!

  2. I dont know quite where to start with this post! Even ignoring the absolutely delicious looking pies (which takes a lot of doing i can tell you!) i think ive fallen in love with those plates and that little pie maker, they are adorable!! I cant believe they were such a bargain either, nothing more smile inducing :) Lovely post!

    I have the mini lattice pie molds from William Sonoma. These heart ones are so cute! I want to get them now too.

    Ditto on the above comments. Can’t wait to go to the mall and get a mold and try this recipe. The picture makes them look pretty and yummy. The recipe doesn’t state how many minis it makes, but by the picture, I take it it’s six (6)?
