It’s Sunday night and admittedly don’t have any revolutionary recipes to offer.
I just want to marvel at the taters I bought today at the grocers.
It was a bag of lil’ taters….tri-colored taters!
Blue. Red. Yellow.
Little.
Tender.
I had to have them.
I took them home and boiled them until they were smashable soft.
I tossed them with olive oil, kosher salt, cracked fresh pepper and rosemary…
Baked in a 325 degree oven for about 40 minutes until crispy.
And had a side dish that’s colorful and yummy!

you can use almost any herb and they would be good!
