Strawberry Salad

I love strawberries.

Shortcake, ice cream, jam….just plain with sugar or whipping cream.

I’m only starting to explore the deliciousness of strawberries and combining them with different flavors.

One of our local restaurants makes the BEST strawberry salad combining the flavors of strawberries, fresh spinach, young lettuce, red onion, feta cheese and toasted almonds.

Yum.

What makes it even better is that they dress the salad with a homemade strawberry vinaigrette.

Double yum.

So today I offer you ‘double yum’….

Let’s start with the dressing….

We’ve got 6 chopped strawberries, 1 small chopped shallot, 4 tsp. balsamic vinegar, 2 tsp. olive oil, 2 tbs. orange juice and 1/4 tsp. salt.

Throw into a blender and whirl!

Refrigerate dressing after blending…that is after a few licks…

Toss together 3 cups of baby greens and 1 cup of baby spinach…

Top with sliced red onion and sprinkle with low fat feta cheese.

Garnish with sliced strawberries, toasted almonds and drizzle with your homemade strawberry vinaigrette…

We’re having ours with grilled chicken tonight.

Triple yum.
