It’s Friday night and tonight, I really want wings. Why is it that I love all the things that are not good for me?
On Friday nights, you don’t care what’s good for you…
This time though, I came up with a healthy alternative to my wing craving…
I took some thin boneless chicken breasts…
Okay this is one of those recipes where you don’t need exact measurements – it’s Friday night, remember?
So grab as many breasts that suits your fancy…usually one breast per serving…
unless you’re greedy…
Throw a good shaking of Frank’s Wing Sauce over your breasts…or *ahem* the breasts…
and let them soak up the goodness of the hot sauce.
Prepare a hot griddle and fry those babies until done and a wee bit crusty on the outside…
I used my panini grill and grilled them on both sides at the same time.
Slice the breasts into thin slices…
And that’s right, slather them with more of Frank’s sauce.
Set aside and prepare the blue cheese sauce…
I do a generous squirt of mayo/olive oil (or you can you use real mayo – I’m really digging the new mayo/olive oil that’s on the shelves)
Throw in some crumbled blue cheese to taste.
Remember no one’s measuring here…it Friday night and what ever makes you feel good is good with me.
Mix ‘er up.
Take a tortilla wrap (I use whole wheat), spread on some of the blue cheese dressing and a couple of saucy chicken strips. Wrap them up and place on a panini grill and grill until the wrap has nice little grill marks on it and the chicken is warm.
Yum. I serve them with a side salad that’s heavy with chopped carrots and celery tossed with a light vinaigrette dressing.
Double yum.
