Lobster BLT’s

Tonight we’re celebrating! I made it through to round two of Saucy Mama’s “Sliced” Contest!

I am honored as there were so many delicious entries that I wasn’t sure I would make the cut!

So tonight – we are taking one of our favorite sandwiches – BLTs – over the top by adding poached lobster tails, avocados and yes – Saucy Mama’s Creamy Garlic Mustard! I made a simple sauce by combining 1 cup of light mayonnaise with a hefty squirt of Saucy Mama’s Creamy Garlic Mustard.

Yum!

I poached two lobster tails in boiling water and tossed them with a bit of butter. How can you have lobster without a bit of butter?

Assemble your sandwich…I started with an artisan multi-grain bread and started piling it on!
