I wanted to give her something that was a gift for her senses…
and her memory.
Of course! She made that for us countless time growing up.

I used Emeril LaGasse’s recipe from the Food Network using fresh pineapple and LOTS of butter.
Hey – it’s her birthday, right?
The fun part was that I used my new cast iron skillet just like Mom used to.
I never baked in a skillet before.
It turned out beautifully.
The tricky part was the timing of the “flip”…
four minutes out of the oven, loosen the sides with a knife, press the serving plate over the pan securely…
and flip!
