I just made banana ice cream from just one ingredient – bananas!
I first saw this recipe on the Today show, then on Dr. Oz and it began popping up in the blog world.
I had to try it for I found it so intriguing. Did it really taste like ice cream?
You start with a bunch of ripe bananas – not mushy ripe – just ripe.
Slice them into ‘coins’ and put them on a plate or pan. Cover with saran wrap and freeze for at least 1-2 hours.
Remove from the freezer and place in a food processor.
Pulse or blend on high until bananas start to break up. (If you blend on high, you may have to hold the processor so it doesn’t walk. I prefer pulsing it.) You will have to scrap the bananas down frequently during this process as the bananas break down.
Suddenly something magical happens and the bananas turn into a creamy texture like ice cream.
And guess what?
You have delicious, healthy ice cream! You can add chocolate syrup and peanut butter to the processor to vary the flavors.
There’s no excuse now to throw those bananas away anymore!
