It’s Monday night and the day after Mother’s Day, I wanted something simple for dinner. I opened the refrigerator and found a big hunk of bacon staring at me.
Mmmmm….bacon.
I had a smoothie for breakfast and a salad for lunch. Why not?
And I do have my new panini machine…why not?
Ingredients:
Crispy bacon, sliced Granny Smith apples, sharp cheddar cheese and a spicy mustard/mayo spread. (You can buy one at the grocers or mix it up on your own!)
Spread the bread.
You can use sourdough, focaccia, or any thick bakery bread.
I did make my own ciabatta rolls with rosemary and they were to die for! (recipe on those babies tomorrow!)
Set ‘em up.
Bread. Spread. Cheese. Apples. Bacon. Spread. Bread.
Easy, right?
Cook on a hot panini grill unti the cheese is melted and oozing over the bread.
Serve with fresh fruit.
