Grilled Veggies

It was bound to happen…just a matter of time…

Sounds like a Jim Croce song!

After several trips, several holidays and many, many blog posts…

Hubby and I were sitting at the table, looked each other straight in the eyes…

and said….

“It’s time to re-join WeightWatchers!”

Come Monday, that’s what we did.

It’s time, enough is enough.

On Monday, we went to our first meeting – weighed in and set our goals.

We threw out the jelly beans and Easter chocolates…

Replaced them with low fat snacks and lots of veggies!

As far as cooking goes, I don’t feel like I’m sacrificing anything – just need to rethink the offerings.

Tonight was easy and far from sacrifice!

The grill’s hot!

Chop some veggies, throw a steak on (we split a 7 oz. strip between us) and a good salad.

The veggies were so sweet and tender – I have to tell you about them. You can make them with any grilled meat or fish on the grill.

Simply chop 3 cups veggies – I like zucchini, cherry tomatoes, sweet onions and mushrooms…you can use asparagus, sweet potatoes, cauliflower – sky’s the limit.

Toss with 1 tbs. olive oil, Italian or Greek seasoning, garlic salt and fresh cracked pepper. Throw in a grilling pan on the grill and grill for about 10 minutes, stirring every 3 minutes or so.

Once tender and slightly charred, place in serving bowl and garnish with Parmesan cheese.

It’s grilling season – smile!
