Spinach Pasta

A fresh, bright and green homemade pasta - ready to make with your favorite veggies!
  • 1½ - 2 cups all-purpose flour (start with 1½ cups and use extra flour as needed)
  • 2 eggs
  • 10 ounces fresh spinach
  • 1 tbs. kosher salt
  1. Wash spinach to remove grit and place in saucepan with 1 tbsp. salt. No need for extra water if you place in pot after rinsing.
  2. Cook until wilted for about 3-5 minutes.
  3. Drain in colander, rinse with cold water and chop finely.
  4. Mound flour on a bread board and create a well in the middle with a spoon.
  5. Place 2 eggs and chopped spinach in the well.
  6. Slowly incorporate flour into egg/spinach mixture until a soft, tacky dough forms - adding extra flour as necessary.
  7. Knead with hands for about 5 minutes until dough is sticky but not dry.
  8. Let rest for 30 minutes.
  9. Cut dough into 6 pieces and prepare according to pasta maker instructions.
  10. Let dry on racks or in nests for 24 hours or cook immediately.
  11. Cook pasta in salted boiling water for about 2-3 minutes until al dente.
  12. Top with favorite cheeses and toppings.
  13. Makes about 1 lb. of pasta.
