Chocolate Bourbon Tart with Pretzel Crust

A rich chocolate tart complimented by a salty crust with a mustard confectioner's glaze!
  • CRUST:
  • 1½ cups finely crushed pretzels
  • 4 tbs. melted butter
  • ⅛ cup granulated sugar
  • 12 oz. Ghiardelli (or similar quality) bittersweet dark chocolate (60% cacao)
  • 1 tbs. honey
  • 3 tbs. whipping cream
  • 5 tbs. bourbon
  • 1½ cups whipping cream
  • ½ cup powdered sugar
  • 1 tbs. whipping cream
  • 1 tsp. Saucy Mama's Hatch Chili Mustard
  1. Preheat oven to 350 degrees.
  2. Combine crushed pretzels, sugar and butter.
  3. Press into the bottom and sides of a 10" tart pan.
  4. Use the bottom of a glass to firmly press the crust in place.
  5. Bake for 10 minutes - remove from oven and let cool.
  6. Combine chocolate, honey and 3 tbs. of the cream and heat in a microwave for 30 second intervals until melted.
  7. Stir until blended completely and add bourbon until well blended.
  8. Let chocolate mixture cool.
  9. Once cooled, spoon into pretzel crust and refrigerate for at least 4 hours.
  10. Prepare glaze by combining powdered sugar, 1 tbs. cream and mustard.
  11. Mix thoroughly and drizzle on the top of the tart.
  12. Garnish with crushed pretzels.
