Cheddar Bacon Biscuits

- 8 slices bacon
- ½ cup ice water
- ¼ cup Spicy Mama's Roasted Garlic Mustard
- 2 cups all purpose flour
- ½ teaspoon salt
- 1 tablespoon baking powder
- 1 teaspoon white pepper
- 6 tablespoons cold butter, cut into small pieces
- ½ cup shredded cheddar cheese
- Preheat oven to 425 degrees.
- Cook the bacon until crispy, blot dry and chop into small bits.
- Reserve two tablespoons of the bacon drippings.
- In a small bowl, whisk together ice water, mustard and bacon drippings.
- In a food processor using the metal blade, pulse the flour, baking powder, salt and white pepper until blended.
- Add the butter - pulse to combine until the mixture looks like coarse meal.
- Add the mustard mixture and pulse until just blended.
- Remove from the processor bowl - using hands, blend in bacon bits and cheddar cheese until just blended.
- Roll out the dough on a floured surface until ¼ inch thick.
- Cut out with your favorite cookie cutter and place on ungreased baking sheets.
- Bake for 10-12 minutes until golden brown.
- Cool. Serve with cheese and fruit.
- Can be stored in an airtight container for several days or frozen.
