Sausage Tortellini Soup

A hearty full of flavor soup!
Ingredients
  • 1 lb. mild or hot Italian sausage (turkey or pork works fine)
  • 2 tbsp. vegetable oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 28 oz. can crushed tomatoes
  • 3 tbsp. tomato paste
  • 7 cups beef broth
  • 1 cup dry red wine
  • 2 tbsp. dried basil
  • 2 tbsp. dried oregano
  • 5 carrots, thinly sliced
  • 2 medium zucchini, cubed
  • ½ cup fresh parsley, chopped
  • 12 oz. cheese tortellini
  • 1 16 oz. can garbanzo beans, rinsed and drained
  • Salt and pepper to taste
Instructions
  1. Skin sausage and lightly brown; place in soup pot.
  2. Saute oil, garlic and onions; place in soup pot.
  3. Add canned tomatoes, tomato paste, beef broth, wine, basil, oregano and carrots.
  4. Cook uncovered for 45 minutes.
  5. Add zucchini, parsley and garbanzo beans.
  6. Salt and pepper to taste.
  7. Cook tortellini according to package instructions.
  8. Serve soup with cooked tortellini and garnished with Pa
