Turkey Tacos

A healthy and delicious alternative to a Taco kit!
  • 2 tablespoons olive oil
  • 2 lbs. ground turkey
  • 1 tablespoon ground cumin
  • 1 tablespoon chipotle chile powder
  • salt and pepper
  • 1 onion, chopped fine
  • 2 cloves garlic, minced
  • 1 jalapeno, seeded and minced
  • 2 tablespoons tomato paste
  • 1 12-ounce bottle of beer
  • 12 hard taco shells
  • 1 can pinto or black beans
  1. Heat a large skillet over medium-high heat
  2. Add the oil and the ground turkey.
  3. Cook until it begins to brown, about 5 minutes and then add the onion, garlic, and jalapeno pepper, and cook for another 3 minutes.
  4. Stir in the spices, tomato paste, beans and beer and season with salt and pepper to taste.
  5. Continue cooking until liquid has reduced slightly.
  6. Serve in heated taco shells with your favorite toppings
