Spaghetti and Meatballs

An authentic handed down recipe from my Italian neighbor.
Ingredients
  • ½ cup olive oil
  • 3 cloves garlic
  • 1 6 oz. can of tomato paste, with 1 can water
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 28 oz. can tomato puree with 1 can water
  • 1 28 oz. can tomato sauce
  • ½ tsp. baking soda
  • MEATBALLS:
  • 1 lb. ground turkey
  • 1 lb. ground round
  • 2 tbs. fresh parsley, chopped
  • 2 tbs. onion, finely chopped
  • 1 cup unseasoned bread crumbs
  • ¾ cup Parmesan cheese
  • ⅔ tsp. salt
  • 2 tsp. pepper
  • 5 eggs
Instructions
  1. SAUCE:
  2. Saute garlic in oil until brown.
  3. Add tomato paste and saute until the paste absorbs the garlic and oil.
  4. Add other ingredients.
  5. Simmer on low heat for at least one hour.
  6. Add meatballs and cook until done.
  7. MEATBALLS:
  8. Combine all ingredients in stand mixer or by hand.
  9. Form into meatballs and brown in oil in skillet.
  10. Add to sauce until completely cooked.
