A crisp, easy sugar cookie touched with a hint of lemon.
  • 2 sticks unsalted butter at room temperature
  • 1 cup confectioners’ sugar
  • 1 large egg
  • 3 tsp. vanilla extract
  • Zest of a lemon
  • 2½ cups all-purpose flour
  • 1 tsp. salt
  • 1 lb. powdered sugar
  • 3 tablespoons milk, more if necessary
  • 4 ounces softened cream cheese
  2. In a large mixing bowl, cream together the butter and confectioners’ sugar on medium-high speed until smooth. (1-2 minutes)
  3. Beat in the egg, vanilla extract, and lemon zest until blended.
  4. Mix in the flour and salt on low speed just until incorporated.
  5. Form the dough into a ball and wrap tightly with plastic wrap.
  6. Refrigerate until chilled and firm. (at least 1-2 hours)
  7. Preheat the oven to 375˚ F.
  8. Line baking sheets with parchment paper.
  9. Roll the dough out on a well floured work surface to about ¼ " thickness.
  10. Cut with cookie cutters as desired and transfer to the prepared baking sheets.
  11. Bake 8-10 minutes, rotating the sheets halfway through baking, until fully cooked but not at all browned.
  12. Allow to cool on the baking sheet 5 minutes, then transfer to a wire rack to cool completely.
  13. Decorate.
  15. Beat the cream cheese for a couple of minutes until soft and smooth.
  16. Add powdered sugar and milk.
  17. Mix until blended.
  18. Add a bit more milk, if necessary.
  19. You want the consistency of the frosting to be thick so it doesn't slide off the cookie.
  20. Adjust consistency with more sugar or milk.
  21. Frost cookies and decorate.
