Tortellini Soup

This is one of my favorite recipes and I can not believe it’s taken me this long to share it with you!

It’s a hearty soup bursting with flavor and easy to make!

This recipe came across my path many, many years ago from my single days. A group of my single friends would take turns making dinner for ourselves and we would always bring out our best recipes. One day, I walked into my friend Terri’s house and there was this delicious pot of soup simmering away on the stove. I’ve made it ever since and it fondly reminds me of my wonderful girlfriends! We’d crack out the wine and talk about boys and boobs. And the boys who were boobs!

You can use regular pork sausage or turkey sausage depending on how good you want to be. This time I made it with pork sausage and it really made a difference in the flavor.  You can be creative with the vegetables and turn it into your own creation! I used to put the tortellinis in the pot of soup…now I cook them separately and add them into each individual bowl of soup. Otherwise, the pasta soaks up the soup and you get a glumpy mess the next day.


So make this and invite your girlfriends over – and talk about boys!

A hearty full of flavor soup!
  • 1 lb. mild or hot Italian sausage (turkey or pork works fine)
  • 2 tbsp. vegetable oil
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 1 28 oz. can crushed tomatoes
  • 3 tbsp. tomato paste
  • 7 cups beef broth
  • 1 cup dry red wine
  • 2 tbsp. dried basil
  • 2 tbsp. dried oregano
  • 5 carrots, thinly sliced
  • 2 medium zucchini, cubed
  • ½ cup fresh parsley, chopped
  • 12 oz. cheese tortellini
  • 1 16 oz. can garbanzo beans, rinsed and drained
  • Salt and pepper to taste
  1. Skin sausage and lightly brown; place in soup pot.
  2. Saute oil, garlic and onions; place in soup pot.
  3. Add canned tomatoes, tomato paste, beef broth, wine, basil, oregano and carrots.
  4. Cook uncovered for 45 minutes.
  5. Add zucchini, parsley and garbanzo beans.
  6. Salt and pepper to taste.
  7. Cook tortellini according to package instructions.
  8. Serve soup with cooked tortellini and garnished with Pa
