It’s been a busy day. The weather is absolutely gorgeous and I certainly didn’t want to be in the kitchen that long tonight.
I’d rather be sitting on the deck with a glass of wine!
Typically taco night is to be an easy night for cooking, right?
The best laid plans….I decided to try a new recipe for the taco filling. I usually go for the easy route and buy one of those taco kits and through it together not paying attention to the sodium levels. This time I wanted to try a healthy version and saw a recipe on “The Chew” this week that looked healthy and tasty.
Toppings were all chopped and set out on the table. Just having come home from the grocery store, I start to prepare the taco meat.
I don’t know what happened….
I always keep good lists…
Grocery lists, spice lists, Hubby lists, to do lists…
I forgot to get my spices!
Everything’s simmering on the stove and there’s no cumin in sight! I tore apart the spice cupboard and not one bit of cumin.
“Oh Honey….would you mind running to the store for me?”
“Cumin? Can’t you do without it?”, he sighs.
“Pretty please?”
And off he went…what was intended to be an easy night turned into another trip to the store. If you have all your ingredients in front of you, this IS an easy recipe and much healthier than the kits.
The filling is spicy and full of flavor. The beans add a nice texture and fiber.
Oh and I did I mention that the recipe has beer in it? Now that’s one ingredient we had on hand!
And by that time, I needed a beer!
So enough about my not-so-easy taco night…I even thought it was Taco Tuesday…and figured out it was Wednesday…time for that beer!
