It’s Mom’s birthday.
What do you get a woman who’s suffering with dementia?
Material gifts just don’t matter anymore.
I wanted to give her something that was a gift for her senses…
and her memory.
Of course! She made that for us countless time growing up.
It’s so pretty.
Caramelized goodness.
The sweetness of fresh pineapple.
The smell of yesterday.
A gift for her senses.
I used Emeril LaGasse’s recipe from the Food Network using fresh pineapple and LOTS of butter.
Hey – it’s her birthday, right?
The fun part was that I used my new cast iron skillet just like Mom used to.
I never baked in a skillet before.
It turned out beautifully.
The tricky part was the timing of the “flip”…
four minutes out of the oven, loosen the sides with a knife, press the serving plate over the pan securely…
and flip!

I know my ma sure would be as its her alllll time favourite cake, and although i dont have a skillet to make this the traditional way I will be saving that recipe to hopefully give a go in the good ol’ cake pan. Hope you had a lovely day with your ma
